Pumpkin Pancakes

 Ingredients:  
  •  2 1/2 cups pancake mix (we use Buckwheat) 
  • 3 Tbs brown sugar
  •  2 1/2 tsp pumpkin pie spice 
  • 1 egg 
  • 1 3/4 cup milk (we use almond milk) 
  • 2 Tbs oil (we use extra virgin olive oil) 
  • 2 Tbs vinegar 
  • 1 cup pumpkin 
  • chocolate chips (optional)   
  Directions:
 
~Mix all ingredients together
~Cook on a griddle or a large pan on the stove 
**This recipe makes 18 thick, medium size pancakes.
We added chocolate chips to the last 6 we made :)

    Pumpkin Puppy Chow
Three ingredients and so easy!
  • 9 cups of rice chex
  • 1 1/2 cups of powdered sugar
  • 1 bag of pumpkin spice Hershey Kisses (I found them at Wal-Mart)
Directions
~Put the 1 1/2 cups of powdered sugar into a gallon size baggie.
~Dump the 9 cups of cereal into a large bowl.
~Using the boiler method (I don't own a boiler pot so I put some water in a regular pot and placed a metal bowl on top) melt the Hershey Kisses.
~Once they are melted, pour over the cereal and mix until all the cereal is covered. ( I didn't think it was enough to cover all that cereal but I promise if you keep mixing, it will be enough.)
~After the cereal is covered, pour it into the baggie that your sugar is in. 
~Seal it and hand it over to your kids to mix up. Mine loved shaking the bag and getting the sugar all over the cereal.

 Spaghetti Casserole
This is a great make and take casserole.  Everyone I have made it for has asked for the recipe so I thought I'd share it with you!

Ingredients:
-1 large bag of egg noodles
-1 jar of spaghetti sauce or make your own
-1 lb of ground beef (optional)
-1 (8oz) package of cream cheese
-1 large sour cream
-12oz of shredded mozzarella cheese
-12 oz of shredded cheddar cheese

Directions:
~Cook noodles, drain and set aside
~Brown beef, drain grease
~Add the spaghetti sauce and beef to the cooked noodles and mix together
~Mix the sour cream and cream cheese together, set aside
~Put first layer of noodle mixture, then a layer of the sour cream/cream cheese mixture, followed by a layer of the shredded cheeses
~Repeat layers, ending with the shredded cheeses
~Bake for 30 mintues at 350 degrees
 
Crockpot Lasagna
very yummy and easy!

Ingredients:
-nonstick cooking spray or one Slow Cooker Liner
-1 26oz jar pasta sauce or homemade
-3/4 cup water
-1  15oz carton part-skim ricotta cheese
-1/2 cup shredded carrot or a container of any kind of veggie baby food
-6 regular lasagna noodles
-1 1/2 cups part-skim shredded mozzarella cheese (6oz)

Directions:
~Coat crockpot with cooking spray or line with Slow Cooker Liner
~In a large microwave bowl, stir together pasta sauce & water. Cover with wax paper and microwave on high for about 3 minutes.
~ In a medium bowl, stir together the ricotta cheese and carrots or baby food; set aside.
~ Spoon 1/2 cup of the sauce mixture in the bottom of the crockpot.
~Break half of the noodles & arrange over the sauce. Spoon half of the ricotta mixture over the noodles.  Continue layering in the following order:  1/2 cup mozzarella, 1/2 of the remaining sauce, remaining noodles (breaking them to fit), the remaining ricotta mixture, 1/2 cup mozzarella, the rest of the sauce, and the rest of the mozzarella.
~Put lid on and cook on low heat for about 3 hours...until the noodles are tender.
~Makes 6 servings

**I also like to add a pound of cooked, lean ground beef or fresh spinach to make this dish even yummier!

 Memaw's Spaghetti Sauce
You gotta try this!

Ingredients:
-2 tbsp olive oil 
-1 clove minced garlic
-1/2 cup chopped onion
-10 1/2 oz can of tomato soup
-2  6oz cans of tomato paste
-1/2 cup of coffee
-1 tsp salt
-1/2 tsp oregano
-1/8 tsp pepper 
-8 oz. mushrooms (if desired)

Directions:
~Heat olive oil in a large skillet
~Add garlic & onion, cook until lightly brown
~Add ground beef, breaking into small pieces & cook over medium heat
~Stir in tomato soup, tomato paste, coffee beverage, salt, oregano, & pepper 
~Simmer uncovered over very low heat, stirring occasionally


 Low Calorie Treat
I love this yummy 90 calorie treat and its so easy to make. 

Ingredients:
-1 chocolate graham cracker
-2 tbsp of fat free cool whip

Directions:
~Break graham cracker in half
~Put cool whip on bottom cracker
~Put other half to cracker on top to make a sandwich
~Stick in freezer for an hour
~Enjoy a 90 calorie icecream sandwich
I don't even like Cool Whip but I LOVE these!!



 
Gigi's Pumpkin Muffins

Ingredients:
-1/2 cup of water
-2 eggs
-1 cup pumpkin
-3/4 tsp cloves (I add a little extra)
-1 1/2 cups sugar
-3/4 tsp cinnamon (I add a little extra of this too)
-1/2 tsp salt
-1/3 cup of oil
-1 3/4 cups of flour
-1 1/2 tsp baking powder
-1/2 tsp baking soda

Directions:
~In a large bowl, beat eggs; add pumpkin, sugar, cloves, cinnamon & salt
~Add oil & mix well
~Sift together baking soda, baking powder, & flour
~Add dry ingredients to the pumpkin mixture & stir well
~Add water & mix well
~Fill muffin papers 2/3 full.
~Bake at 400 degrees for about 12-15 minutes.
~Makes 18 large or 24 small muffins
~Enjoy

Derby Pie
(This has been a favorite in my family for as long as I can remember.  I love to give them as Christmas gifts to neighbors, teachers & friends.)

Ingredients:

-2 eggs, slightly beaten
-1 stick butter, melted
-1 cup English walnuts, chopped
-1 cup chocolate chips
-1 cup sugar
-1/2 cup flour
-1 tsp vanilla
-1 (9in.) pie shell, unbaked

Directions:
~Combine all ingredients
~Mix well
~Spread into pie shell
~Bake for 30 minutes at 350 degrees
~Delicious right out of the oven or refrigerated
~Add a scoop of vanilla icecream for an extra yummy treat
